Sugar Free Pudding with Apples

I am back to share a recipe with you which has been on my mind since a long time. Recently I got a chance to actually try it. Off late I have been more inclined towards a gluten free and sugar free diet. And have been searching for ways to deal with my occasional sugar cravings. Now the great thing about being off sugar and consuming more fruits is that you really start appreciating the sweetness of fruits. And this recipe here is completely inspired by fruits. It is basically only fruits. 🙂 And yet it will satiate your sugar cravings in the healthiest possible way !

Applesauce is the magic ingredient here. After coconuts another ingredient which I am really going crazy about these days is applesauce. 🙂 It has so many varying uses besides being used in cakes specially as a vegan replacement. I love having this amazing baby food just by spoonfuls 😀 . Its super light on the stomach and is even recommended for those having trouble digesting raw apples. Apples get sweeter on cooking as all those natural sugars caramelize and get even more yummy. Its good to however watch them and don’t allow them to overcook. Its also important to get a smoothness in your applesauce as that gives it a texture similar to a custard / pudding. Remember to add lemon juice to avoid losing color on the apples. Choose sweeter juicy apples for a sweeter sauce.

Having custard in mind I was also inspired by Indian dessert of falooda. They use soaked sabja seeds / basil seeds in this dessert which adds another texture to it. I have used Chia seeds here to get some crunch in the texture. This texture can also be added using dry fruits. Keeping in mind a detox I chose to go with only fresh fruits for the crunchy element and kept it very light. But boy it is plenty satisfying without any amount of sugar or grain or fat ! A bowl of this is a mini meal by itself. It is the healthiest dessert I’ve ever made and had, and the guilt quotient on this is zero ! 😀

So here it is guys. Whatever plant based diet you are on 🙂 there are numerous ways to be indulgent for your taste buds. All it takes is a bit of innovation and creativity. Would love to hear from you if you try the recipe.
Ingredients

Serves 2

Two big ripe apples (approx 250-300 g)
1 teaspoon Chia seeds
2 teaspoon lemon juice
Half cup water
1/2 – 1 cup chopped fruits like Sapota , Apple , Pomegranate , Grapes , Banana
Chopped Almonds (optional)
Recipe

1. Peel , core and chop the two apples into small pieces.
2. In a saucepan cook the chopped apples on medium heat along with half cup water.
3. Once the water starts boiling, cover and simmer for 10 to 15 minutes until the apples are soft when poked with a fork.
Note: If the water completely evaporates add few tablespoons and continue until apples are cooked
The cooked apple pieces still retain shape and are not completely mashed
4. Add lemon juice to the cooked Apples and mix. Allow this mixture to completely cool.
5. Blend the above mixture into a smooth paste to make applesauce which is the base of your custard.
6. Remove the Apple sauce into a bowl and mix in the Chia seeds and keep aside for 20 minutes in refrigerator.
7. Serve cold in bowls topped with your choice of chopped fruits and dry fruits.
