Leek and Potato Soup

Winter has come !! Its time for soups 🙂

Aren’t Soups the best food during winter. Something so satisfying and cozy about a hot bowl of this liquid. Warms up your body, light on your tummy and can surely be made healthy. 🙂


I had always wondered how to use leeks in cooking. They aren’t that common around where I live. Was curious to try a potato and leek soup. Conventional recipe loads up on butter and cream. But who wants to eat all that extra cholesterol  :-P. This recipe is dairy free and with no cream. I loved the natural creaminess in soup with the potatoes. But those wanting a more creamy taste could opt for coconut cream.


Make sure to wash the leeks well before using in the recipe. Cut them half lengthwise and wash the bulb end thoroughly under a tap.

Serves : 2


2 tbs Olive Oil
3-4 small Leeks , White and light green parts , Chopped
3-4 small garlic cloves – smashed
3 medium / 2 large potatoes – chopped into small cubes
2 1/2 cups water / vegetable broth
1 dried bay leaf
1/2 tsp dried thyme leaves
Salt and Pepper to taste
Coconut cream & coriander flowers for garnish


  1. Heat olive oil in a pan.
  2. Add the Bay leaf and let it release some flavor into the oil. You can smell the aroma of the spice as it cooks in the oil.
  3. Add the garlic and leeks and cook on a medium flame till leeks are wilted. Stir in-between.
  4. Add the potatoes, 1.5 cups water , thyme leaves. Season with salt and pepper and bring to a boil. Once boiling, lower the heat and cover with a lid.
  5. Cook the mixture for 10-15 minutes till the potatoes are soft.
  6. Remove the bay leaf from the mixture and blend with a hand blender.
  7. Alternatively cool down the mixture and use a mixer grinder to grind into a smooth paste/liquid. Make sure the mixture is not too liquid before blending.
  8. Bring the smooth puree back onto heat. Liquefy with more water / stock if the soup is too thick and bring to a boil. If it gets too watery boil to get rid of extra liquid.
  9. Season with more salt if needed.
  10. Garnish with coconut cream and coriander and serve hot 🙂
